Description

Jairo Arcila is a third-generation coffee grower from Quindio, Colombia. This coffee was grown at the Santa Mónica farm, with cherries harvested following strict ripeness criteria, floating, and hand-sorting to remove defects. After 30 hours of underwater fermentation, the cherries are pulped, gently washed, and dried in temperature-controlled conditions.
